Meal Plan for Quick & Easy Dinners in 30 Minutes or Less: October 14-20, 2024

These meals are simple, quick, and full of flavors your kids will love!


Day 1: Monday


Dinner: Cheesy Chicken Quesadillas


  • Ingredients: Flour tortillas, cooked shredded chicken, shredded cheese, olive oil.

  • Instructions: Heat olive oil in a pan. Place one tortilla in the pan, sprinkle with chicken and cheese, and top with another tortilla. Cook for 2-3 minutes on each side until crispy and golden. Serve with salsa and sour cream.


Day 2: Tuesday


Dinner: 15-Minute Spaghetti with Marinara


  • Ingredients: Spaghetti noodles, jarred marinara sauce, grated Parmesan.

  • Instructions: Cook spaghetti according to package directions. In a separate pan, heat marinara sauce. Drain the pasta and toss with marinara. Top with Parmesan cheese and serve with garlic bread or a simple salad.


Day 3: Wednesday


Dinner: Easy Beef Tacos


  • Ingredients: Ground beef, taco seasoning, soft or hard taco shells, shredded lettuce, shredded cheese, salsa.

  • Instructions: Brown the ground beef in a skillet, drain, and add taco seasoning with a little water. Simmer for a few minutes. Serve with taco shells, cheese, lettuce, and salsa. Let the kids build their own tacos!


Day 4: Thursday


Dinner: Veggie-Packed Stir-Fry


  • Ingredients: Pre-cooked chicken strips, frozen stir-fry veggies, soy sauce, rice (instant or pre-cooked).

  • Instructions: In a large pan, sauté frozen veggies until heated through. Add pre-cooked chicken strips and soy sauce, stirring everything together. Serve over rice for a quick, healthy dinner.


Day 5: Friday


Dinner: Mini Pizzas


  • Ingredients: English muffins, marinara sauce, shredded mozzarella, pepperoni (optional).

  • Instructions: Split English muffins in half and place on a baking sheet. Top with marinara sauce, mozzarella, and any additional toppings like pepperoni. Bake at 375°F for 10 minutes or until the cheese is melted and bubbly. Serve with carrot sticks or fruit on the side.


Day 6: Saturday


Dinner: Baked Chicken Tenders & Sweet Potato Fries


  • Ingredients: Pre-made chicken tenders, frozen sweet potato fries.

  • Instructions: Bake chicken tenders and sweet potato fries according to package directions (typically 20 minutes or less). Serve with a side of ketchup or honey mustard for dipping.


Day 7: Sunday


Dinner: Breakfast for Dinner – Pancakes & Scrambled Eggs


  • Ingredients: Pancake mix, eggs, butter, syrup.

  • Instructions: Prepare pancakes according to the package. While cooking the pancakes, scramble eggs in a separate pan. Serve pancakes with butter and syrup, and add fruit on the side like berries or bananas.


Tips for Success:


  • Prep ahead: If you have extra time on the weekend, cook the ground beef or chop the veggies for the week to make dinner even quicker.

  • Kid-friendly sides: Keep things simple with sides like apple slices, cucumber sticks, or steamed veggies to balance the meals.

  • Let the kids help: Letting them top their own pizzas or assemble tacos makes dinner more fun and gives them a sense of ownership.
